What a year to look back on, with the shock of the Covid-19 onset followed by months of various stages of lockdown that impacted on us all. We hope that the year to come will be a lot less disruptive for people all around the world.
Although New Zealand has come through the Covid crisis in pleasingly good shape, it’s been a reminder to us all that things can change without warning. It’s been gratifying to see how we all reacted to the real and potential issues, with only a small number attempting to deny the reality as they pursued selfish personal agendas.
The good news for us and our many patient customers is that we have at last been able to replenish our stocks and have a full range of products available to you. One exception is our Pet Pad range as we are having some difficulty getting all the base materials we need but we’re confident that all problems will be solved early in the new year.
All our MagneSleep underlays are now in stock, across both the Cotton Quilted and Merino Lambswool ranges. Our Mulberry Silk pillows are again here, this time with the addition of some pure lambswool to the Mulberry Silk filler to provide even greater luxury and comfort. Once again we’re offering a cotton quilted Magnetic Pillow Protector to complement the smaller Magnetic Pillow Pad. And our ever-popular Magne-Feet and Magne-Dots are in full supply, along with the many other products on our website.

Of course, it wouldn’t be Christmas without some decadent, delicious treats and here’s a special one we’ll share with you. It’s a chocolatey twist on the traditional Christmas Cake, it’s easy and fun to make and, while it can last for weeks in a tin, is very quickly consumed by our family. Try it – you deserve something this special.
Italian Chocolate Christmas Cake (with thanks to “Mindfood”, an equally special monthly magazine well worth subscribing to)
100g butter, softened
150g brown sugar
3 eggs, lightly beaten
3 tbsp honey
1 tbsp orange zest
1 tsp vanilla extract
400g Christmas fruit mince
375g dark chocolate (70% cocoa solids), roughly chopped
100g roasted blanched hazelnuts, finely chopped
100g roasted blanched almonds, finely chopped
125g plain flour, sifted
Preheat oven to 160° (140° fan forced). Grease and line the base of a 23cm diameter cake tin with baking paper.
Beat together butter and brown sugar until pale and fluffy. Add eggs, honey, orange zest and vanilla and continue beating until smooth. Stir in the fruit mince, chocolate and nuts. Fold in the flour until well mixed.
Spoon the mixture into the prepared tin and smooth the top. Bake for 40-45 minutes, until cooked around the edges but slightly soft in the middle. The cake will firm up as it cools.
Leave to cool in the tine for 30 minutes then remove from the tin and cool on a rack.
Note: the second time we made this (we couldn’t wait for Christmas) we reduced the amount of dark chocolate to 250g and added a tablespoon of cocoa powder to balance the sweetness. (We also added a splash of brandy and sherry, but that’s up to you.)
This cake resembles a traditional panforte – serve with slices of poached fruit and marscapone, or enjoy with fresh berries, cherries and some quality ice cream.
